All
tea comes from the Camelia sinensis plant. Based on the
method of production, teas can be divided into three
categories: black, oolong and green. Green tea is an
unfermented tea. After withering (if withered at all),
the leaves are immediately pan-fired, steamed or baked
to prevent oxidation, thus no chemical change. The
leaves are then rolled and dried. Rich in
polyphenols antioxidants, green tea has been a
major focus of nutrition research linking green tea consumption with lower rates of
cancer and heart disease.
Black
tea is withered, fully oxidized (fermented) and dried.
Black teas are available from various estates, countries
and regions, with added flavourings and also as
specialty blends.
