The
"rule" for infusion baskets (or strainers) is
quite simple: to be successful, they should nearly fill
the entire space inside your teapot, cup or mug. There are many types
available: tea socks (cotton fabric), paper filters
(t-sacs), ceramic inserts, cylindrical
mesh inserts, mesh balls, pincer spoons, polyester and wire-mesh
baskets and the bamboo basket.
All
types can be used for a successful infusion; however, we
do not recommend the popular tea ball or double-sided
spoon because there is insufficient room for the leaves
to unfurl. The infuser
should allow enough room for the leaves to unfurl and
swirl to give the tea its full aroma and flavour. The
tea ball or double-sided spoon is not recommended with
Rooibos; the tiny needles slip through the holes.
